Ingredients
- 8 ounces of Self-raising Flour
- Pinch of Salt
- 3 ounces of Butter
- 4 ounces of Light Brown Sugar
- 2 Eggs
- 1 Apple grated
- 2 ounces of Ground Almonds
- 1 teaspoon Vanilla Extract
- Orange Juice
- Frozen Blueberries
Method

Grease a Muffin tin

Set oven at 180° C

Sieve 8 ounces of Self-raising Flour into a large mixing bowl

Add the Salt, Light Brown Sugar and Ground Almonds to the f Flour and mix together

Add the Butter to the Flour and work in with your fingertips

Beat 2 eggs in a mixing jug

Add the Vanilla Extract to the Eggs

Add the Eggs and Grated Apple to the dry ingredients

Add 2 tablespoons of Orange Juice and mix well

Add Frozen Blueberries, fold in gently

Mix well and spoon into a prepared Muffin tin

Put into the oven for 17 – 20 minutes at 180° C until golden brown

Leave to cool in tin and pop out
