1. Grease a Muffin tin
  2. Set oven at 180° C
  3. Sieve 8 ounces of Self-raising Flour into a large mixing bowl
  4. Add the Salt, Light Brown Sugar and Ground Almonds to the f Flour and mix together
  5. Add the Butter to the Flour and work in with your fingertips
  6. Beat 2 eggs in a mixing jug
  7. Add the Vanilla Extract to the Eggs
  8. Add the Eggs and Grated Apple to the dry ingredients
  9. Add 2 tablespoons of Orange Juice and mix well
  10. Add Frozen Blueberries, fold in gently
  11. Mix well and spoon into a prepared Muffin tin
  12. Put into the oven for 17 – 20 minutes at 180° C until golden brown
  13. Leave to cool in tin and pop out
