Ingredients
- 1 Carrot
- 1 Courgette (Zucchini)
- 1 Onion
- 3 – 4 rashers of Bacon / slices of Ham
- 3 – 4 ounces of grated Cheese
- Salt
- Pepper
- Herbs
- 8 ounces of Self-raising Flour
- 4 Eggs
- 125 ml Oil
Method

Grease a Muffin tin

Set oven at 180° C

Sieve 8 ounces of Self-raising Flour into a large mixing bowl

Grate the Carrot, Courgette and Onion

Shred the Ham with your fingers

Lightly beat 4 eggs in a mixing jug

Add the Carrot, Courgette, Onion, Ham and grated Cheese to the Flour

Pour in the Eggs and the Oil

Add Salt, Pepper and Herbs

Mix well and spoon into a prepared Muffin tin

Put into the oven for 15 – 20 minutes until golden brown

Leave to cool in tin and pop out

Serve with Salad or Soup
