1. Grease a Muffin tin
  2. Set oven at 180° C
  3. Sieve 8 ounces of Self-raising Flour into a large mixing bowl
  4. Grate the Carrot, Courgette and Onion
  5. Shred the Ham with your fingers
  6. Lightly beat 4 eggs in a mixing jug
  7. Add the Carrot, Courgette, Onion, Ham and grated Cheese to the Flour
  8. Pour in the Eggs and the Oil
  9. Add Salt, Pepper and Herbs
  10. Mix well and spoon into a prepared Muffin tin
  11. Put into the oven for 15 – 20 minutes until golden brown
  12. Leave to cool in tin and pop out
  13. Serve with Salad or Soup
